Today is Opal's last day here, I am so sad to see her go, I decided to make a special breakfast for her. I give you my Mini Quiche's:

These are in Puff Pastry, with bacon, asparagus, egg and cheese. Very Yummy if I do say so myself. I made extra today and put most in the freezer as I really hate heating up the house in summer.

Yesterday we took a trip to the Schwab Estate in Lorretto Pa. It was built by Charles Schwab, but is now a Franciscan Friary. The gardens are open to the public but unfortunately the Mansion itself is not. I can just imagine what the view is from the master suit.

Anyhow, tomorrow I drive Opal to Pittsburgh to catch her flight home. Its been a fun month!
